The Holiday Bikini – The Method

WHere is a simplified take on a drink from a new menu. This is a party-sized pre-mixed that's packed full of tastes of the Christmas time, which makes it ideal for your celebration. Reserve the remaining citrus syrup to use in breakfast cocktails, desserts, or to make additional servings of the drink.

Serves 10 guests

Ingredients for the Citrus Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Cocktail (produces 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Citrus Syrup: Place all the ingredients into a pot, bring to a simmer, stirring to dissolve. After that, remove from the heat and let it to cool down fully. Pour into an sealable bottle, cap it and refrigerate it chilled, it will last for around one month.

For the Batch Mix: Combine the specified spirits and syrup into a sizeable container, let it rest for 60 minutes, then filter it best through muslin, to ensure it's perfectly clear.

For serving: Pour 85ml of your batch mix to a cocktail shaker packed with ice, and stir gently for one minute until cold. Pour to a chilled martini glass or equivalent, decorate with a few cranberries and finish using a brief mist of mandarin oil above the glass.
